impromptu dinner out.
and another day has come to a close...
today was a doozy! how about you? i spent the afternoon work, work, working away with a few short walks and an acupuncture sesh thrown in for good measure. i snacked on a vanilla protein smoothie (same recipe as usual) and copious amounts of pumpkin bread before wrapping things up in favor of a delicious weeknight dinner out.
around 4:00 this afternoon i whined my way into dinner with matt at one of my favorite pizza spots! mista is a locally owned spot serving up sandwiches, pasta, and cracker crust pizza. all ingredients are fresh, natural, organic and 100% delicious. i just love the exponential improvement in taste when ingredients are responsibly grown and produced. nothing beats farm fresh veggies.
we started with the mista salad. fresh field greens topped with apple slices, dried cherries, crushed macadamia nuts, and low fat feta, all tossed in a mista vinegarette (which is absolutely deeelish. would die for the recipe!) the perfect palate cleanser for what the main attraction...
a ten-inch heart smart pizza on whole wheat cracker thin crust. homemade tomato sauce, roasted organic veggies (the eggplant was to die!), organic baby spinach, organic shredded mozzarella, sea salt and e.v.o.o.
i absolutely adore the crispiness of this crust and the layers upon layers of veggies they pile on the pie.
isn't it fun to dine out on a week night?! it feels like such a special treat and is always great to get me out of a mid week funk. as this was an impromptu date, i have homemade pizza on the menu for tomorrow night as well! oh well... double pizza never hurt no one :)
i'm off to find something sweet and pop into bed early.
